The majority of people associate healthy nutrition with sacrifice and food without taste. Here is a recipe that is both healthy and tastes fantastic.
Ingredients you need:
– for 2 people –
- 1 Cup white rice
- 3 Chicken breasts
- 2 Carrots
- 1-2 Red chili peppers
- 2 Onions
- 1 Clove of garlic
- Broccoli
- 50 ml Vegetable stock
- 1 Handful of cashew nuts (optionally)
- 4 Tblsp Peanut butter (optionally)
Spices you need:
- Curry
- Salt
- Pepper
- Soy sauce
Preparations:
- Cut the chicken into strips and marinate it with soy sauce for a couple of minutes
- Prepare the vegetable stock by brewing up the water and adding the concentrated powder/paste.
- Rinse the rice, add 1 ½ cups of water, bring the rice to a boil, turn the heat down, place the lid on the pot, simmer the rice for approx. 15 minutes
- Peel the carrots, cut them into halves and cut into thin strips
- Mince the red chili peppers
- Cut the broccoli into florets and put them for 1 minute into boiling water
- Cut the onions into small dices, peel and mince the garlic, add it to the cut onions
How to make it:
- Heat a pan with oil on medium heat, add the chicken, and turn the heat down a little bit, if necessary. Cook it for a couple of minutes on one side before flipping them over to the other side
- Add the onions and garlic
- Add just a bit of the vegetable stock
- Add curry
- Add a bit more vegetable stock, so that the all chicken becomes “curry-yellow”.
- Add the cashews, red chili peppers, carrots and let it boil for a couple of minutes before you add the broccoli.
- You can optionally add some peanut butter – according to taste
- Add a bit of soy sauce, salt, and pepper.
- That’s it. Serve it on a plate with rice. Bon appétit!

Hints and tips:
Be careful with the chili peppers and extract the cores if you do not like your food very hot!
